Cheesy vegan ragu

Dear Readers,

Now that the weather has definitely changed into cold autumnal days I find this cheesy vegan ragu I made for lunch a perfect solution to warming me up!

Its super quick, cheap and easy as always.

All you need is;cheesy vegan ragu

1 Onion (chopped)

1 garlic clove (diced)

1tbs coconut or olive oil 1 courgette

1/2 can chickpeas

1 tin chopped tomatoes

1 cup spinach

1/4 of a slab of violife cheese (gary) or any vegan cheese of your preference (minimum)

2/3 leaves of basil

Method

Heat the oil in a pan, then add the onions and courgette, sweat for 5minutes then add the garlic. Allow to continue to sweat until onions are clear then add the tomatoes and chickpeas.

Simmer for 10minutes or until courgette is properly cooked…..

Finally add the spinach and cheese which you can dice or grate in. Once the cheese is melted into the mixture and the spinach is cooked serve with the basil leaves on top.
