This Kale avocado salad is super healthy, nut free, vegan and most importantly deliciousus and easy to make! Its packed with protein from chickpeas and sunflower seeds. Whilst plenty of vitamins from the green veg. A simple lemon juice dressing helps to your taste buds to enjoy the salad without added salt or loads of calories.
All you need for this kale avocado salad is;
3 Cups Kale
1/2 Broccoli head
1/2 can chickpeas
1 Garlic clove
2 Tsp coconut oil
1/4 Cup sunflower seeds
1/2 lemon (Juice)
Dice the clove of garlic and prepare the broccoli heads. Steam the Broccoli and Kale in separate saucepans, meanwhile fry the chickpeas in the oil and garlic until they begin to brown. Remove from the heat and put in a serving bowl along with the avocado. Then once cooked drain the kale and broccoli and combine along with the lemon juice. Finally sprinkle the sunflower seeds on top.
