Potato, Chickpea and Spinach Curry

Dear Readers,

I thought I would share with you all another very simple recipe for a curry I made up the other day,

Potato. Chickpea and spinach curry

Ingredients-

2tbs Coconut oil

1 Onion (chopped)

2 cloves of garlic (diced)

1 large baking potato

1 tin chopped tomatoes

4 Carrots

1 tin Chickpeas

400ml water

1 tsp Smoked Paprika

1 tsp turmeric

1/2 tsp ground coriander

3 Handfuls of spinach

Brown rice (as much as you like)

Method:

Heat a large saucepan with coconut oil, add the chopped onion and cook until the onion begins to sweat usually around 8 minutes and then add the diced garlic. Cook for a further 2 minutes.

Whilst the onion is cooking prepare your vegetables, peel and chop carrots and potatoes. Once garlic and onion have cooked add potatoes and carrots to the saucepan, stir for a minute then add the water. Place a lid and leave to cook for around 10 minutes. In a separate sauce pan begin cooking your rice.

After 10 minutes remove the lid to your saucepan and add your tomatoes and spices. Leave to cook for another 5 minutes. Then add your chickpeas and spinach, cook for another 5 minutes or until your carrots and potatoes are soft. Once rice is cooked take off the heat and drain. Thats all!
