Super quick Avocado, Tomato and Hummus wrap

This is my first of many recipes I’m going to share with you all, I love this recipe because its quick, simple and delicious and 100% vegan of course! Its perfect for an on the go lunch, so here it is;

1 wrap

2tbs hummusthumb_IMG_1828_1024

1/2 an avacado

1 handful of cherry tomatoes

1/2 Lemon (Juice of)

sprinkling of nutritional yeast (optional)

1 small gem lettuce or 2 handfuls of kale

(for variety I sometimes like to use kale instead of lettuce, both taste equally good!)

Spread the hummus on the wrap then assemble the avocado, tomatoes and lettuce/kale, drizzle the lemon juice over  and add nutritional yeast, fold the warp and your good to go! Enjoy!
